Vegetarian Spring Rolls with Spicy Peanut Sauce

Contributor: Ashley Hightower Makes 4 serving(s) + Ingredients4 sheets of rice paper 1 cup mixed veggies such as cabbage, red pepper, cucumbers, onions (shredded or julienned) 1/4 cup cilantro leaves 1/4 cup basil leaves
Peanut Sauce 2 T. creamy peanut butter 1/2 t. minced ginger 1 clove garlic, minced 1/4 cup chopped cilantro Juice of one lime 1 t. or less hot sauce such as sriracha 1/3-1/2 cup water Salt
+ DirectionsUsing a whisk, combine all ingredients for peanut sauce in a medium-sized bowl.
To make spring rolls, soak rice paper one sheet at a time for about a minute until soft. Place 1/4 cup of vegetables and several leaves of cilantro and basil in the middle. of rice paper, roll up folding in the ends after first fold. Cut spring rolls in half and serve with spicy peanut sauce.
