Coconut Basmati Rice

+ Ingredients

1 1/2 cups basmati rice

1 1/2 cups water

1 t. sugar

1 1/2 cups well-stirred unsweetened coconut milk (can be low-fat)

1 t. salt

 

+ Directions

Bring water and coconut milk to a boil.

Add rice, sugar and salt, stir once, cover.

Cook about 25 minutes until rice is tender, stir a couple of times to prevent sticking but keep covered.
