Apricot Dip with Pistachios

+ Ingredients

2 cups plain, low-fat yogurt

1 cup dried apricots

1-2 tsp. sugar (to taste)

1 tbsp. crushed pistachio nuts

 

+ Directions

Line a strainer with cheesecloth and place over deep bowl.

Add yogurt to strainer, cover and refrigerate overnight. Yogurt will drain and thicken. Discard liquid.

Place apricots and sugar in a small saucepan with just enough water to cover.

Simmer and cook until apricots are very soft, about 10 minutes. Let cool.

Drain apricots and puree in food processor. Add yogurt and process.

Chill for one hour. Top with pistachio nuts and serve with fresh fruit.
