Ask the Expert: Cooking Eggs

“Should you cook eggs to enable your body to digest the protein or are they ok raw?”

Egg white is one of the most digestible and nutritionally effective proteins for humans. For optimum protein absorption, eggs should be cooked, but not overcooked. It is best not to eat raw eggs due to the risk of salmonella.
